Han de coure durant una hora i mitja o dues (depenent de la mida) \u00a0aproximadament a una temperatura d\u2019uns 170 graus. I han de quedar ben cuites lleugerament enrossides. Remena-les tres o quatre voltes al llarg de la cocci\u00f3. Si queden\u00a0 sense ni mica d\u2019aigua, ves-hi afegint una o dues cullerades d\u2019aigua freda. No m\u00e9s. Un cop cuit, passa tot el contingut per un <em>t\u00farmix<\/em> fins a obtenir un pur\u00e9.<\/p>\n<p>Tot seguit procedeix a netejar el manat d\u2019espinacs.
